Teachers and students and two new apprentices are now working hard, preparing for the comeback which they intend to lead up to the Christmas holidays. They plan an exciting new menu, opening times, offers and meal-deals to entice our customers back after a such a long period.
New Restaurant Manager, Peter Hudson has a very distinguished career in the food and beverage sector dating back to the early 1980s. Starting work in the kitchens washing pots and pans on a government Youth Training Scheme (YTS), he also got the chance to attend college one day a week, and it was here that a career in catering captured his imagination.
It wasn’t long before he became a commis chef, then worked through to a chef de partie, sous chef, head chef, and even an executive head chef. He later moved into hotel restaurant management at Café Rouge in Greenwich, by becoming a team leader and then assistant manager.
Hotel management was next on Peter’s hit list with a range of different jobs at the Shurland Hotel in the Isle of Sheppy, the El Commodore in Maidstone, before working front of house at the Dorchester on Park Lane.
Peter’s career has also seen him work across a number of different roles at the Ritz, as well as in hospitals. He has an amazing number of skills and knowledge at all levels and in a range of disciplines.
Busy putting his reopening plans in place, Peter says: "There's still much to do before we can finally open our doors once again, with a new set of students, new head chef, teachers and support staff all getting to know one another, planning and delivering a top-notch service for our customers. It's all very exciting and we are determined to make it a huge success.
“I’m delighted to say we now have our two new apprentices in place, Lucy being one of them. She will be assisting me front of house and although she is only a few weeks in to her role, she’s very enthusiastic and beavering away to make our grand reopening something special. At the BR6 Restaurant, Bakehouse and Terrace, our aim is to afford all of our customers an excellent dining experience so that they leave with a desire to return again soon.”
Former Catering student, Lucy is thrilled to be a part of the team breathing new life into the Restaurant and Bakehouse. She says: “I aim to get as much out of this apprenticeship as I can and then move on in my career. I studied my Levels 2 and 3 Hospitality here at the College and have also been a part of the Marriott Hotel takeover project twice in succession - so I’m getting lots of experience under my belt.
“We are going to be concentrating on taking bookings leading up to Christmas and making it as merry as we possibly can for our new guests and customers. I simply can’t wait to open those doors again after such a long time.”
